Smoked Beetroot Terrine; Pickled Romanesco Cauliflower, Aguardiente Fennel Gelee, Violet Mustard - a collage of flavors and composed elements, a hint at Taveras' Colombian roots

Taveras uses a lot of family imagery in her work. Liebman wanted to show this heritage and awareness in the menu and accordingly created 'Papi's Sancocho', a rich fish stew with quinoa rice and sea shells

'Morir Soñando', a Dominican drink of fresh orange juice and condensed milk was served as a palate cleanser. 'In Spanish, the name means "to die dreaming"', says Liebman. 'That name has always been a favourite of mine. I also think it ties in with the dream imagery captured in Taveras' collages'
